OUR HERITAGE

A Vision Reborn.

Since 1998, our family has been the steward of Cretan hospitality with care and passion. SPORA was born in 2025 as the natural continuation of a long-standing relationship with the land and its fruits.

On our private estates in Roukani, Heraklion, we cultivate olive oil, wine, herbs, and seasonal produce. Every dish tells a story of earth, seasons, and tradition.

The Estate

Our family estates in the Roukani area of Heraklion provide pure raw ingredients for the "cultivation" of flavours — olive oil, wine, raki, liqueur, raisins, honey, petimezi, carob honey, fruits, vegetables and herbs, gathered at their peak.

Honest Ingredients.

Our menu is a dialogue between past and present. We use traditional clay pot cooking to bring out the pure essence of Crete.

Dairy & Cheese

  • Ntagianta Family Cretan Dairy Products

    From the Ntagianta family we select Cretan cheeses with character, made with respect for tradition and the flavour of the land. Cheeses that carry the simplicity and strength of Cretan livestock farming.

  • Kostakis Staka Chania

    Rich, authentic and deeply rooted in Cretan tradition, the staka from the Kostakis sons gives our dishes the distinctive buttery intensity that makes local cuisine unique.

  • Trypa Graviera Geraki

    An exceptional cheese with a strong personality and deep flavour. Natural ageing and the tradition of the area give this cheese the distinct character that elevates both simple and more complex dishes.

  • Anthotiro Karines, Rethymno

    From Karines in Rethymno, a mountain village where cheesemaking remains part of daily life. Soft, refined and delicate, it brings the flavour of the Cretan mountain countryside to the table.

  • Anthogalo Zominthos & Galeni

    Products that express both the modern and traditional sides of Cretan cheesemaking. Soft textures, clean flavour and raw ingredients from our land.

  • Milk from local producers

    From producers who respect their animals, nature and the rhythm of the Cretan land. For us, quality starts with care and a relationship of trust with the people behind every ingredient.

  • Eggs Our own hens

    Fresh daily and full of flavour. Used in selected preparations in our kitchen, bringing the warmth and simplicity of an authentic home-produced ingredient to our dishes.

Meat

  • Nikoloudis Cattle Moires

    A family farm and butcher with a focus on quality and provenance. We select meat with a clean flavour and proper handling, so that each dish highlights the raw ingredient with respect.

  • Vardiabasis Lamb

    Meat that expresses the livestock tradition of Crete. The flavour of lamb is directly connected to place, grazing and the care of the producer — elements we want to keep alive in every dish.

  • Manolitsakis Chicken Agroktimata Kritis

    A business connecting the Cretan land with quality, natural farming and authentic flavour. Chicken with a clean flavour profile, ideal for dishes that respect the raw ingredient.
